BBQ pizza in 20 minutes
So, working mom and working dad exhausted after long days of meetings and running after a toddler and needed dinner STAT. Our mental state left us with zero inspiration. We're also trying to be healthier these days. "What do you want for dinner?" "I don't care. I don't want to cook." I decided that if I am going to do this, it better be fast. So, here's what I did....
Preheat oven to 400 degrees.
1 flour tortilla
1 Tbsp. BBQ sauce (Stubb's from Austin, TX is our choice; you can actually buy it at Ralph's & Von's)
1/2 shredded BBQ chicken (from Trader Joe's)
1/4 cup shredded mozarella cheese
1/8 cup green onions
1/4 cup cilantro chopped
Fresh jalepeno slices (the heat is a nice touch)
Take flour tortilla and place on pizza stone or cookie sheet. Spread the BBQ sauce evenly on tortilla. Add chicken. Sprinkle with cheese, green onion and cilantro.
Other optional toppings:
Avocado slices, black beans, corn (frozen roasted corn from TJ's is really good)
Bake in oven for approximately 10 minutes or until tortilla is crispy and cheese is melted.
Then, you'll have to rock, paper, scissors for who has to clean up.
