I am a proud mama. Why? Because I have succeeded in getting my girl to eat brussels sprouts. How? We make "green chips" out of 'em. Now, my daughter likes them so much that she asks for them randomly. And that's what this mama likes to hear from her finicky princess.
I know that YOU may even dislike brussels sprouts. But seriously...this is too easy and tasty to not give it a try.
Ingredients
Brussels sprouts (can buy from Costco)
Extra virgin olive oil
Kosher salt
Directions
1. Pre-heat oven to 450 degrees.
2. Cut ends off of each sprout and cut in half. Unravel / peel the outer layers of the sprouts. Get your little one to help you.
3. Drizzle with a little olive oil and sprinkle with kosher salt.
4. Roast for about 10 minutes. Give'em a toss and put back in the oven for a few more minutes until nice and golden and crispy (see picture).
And then, YOU can brag to your friends that your child eats brussels sprouts.

OMG Brilliant. Going to try it tonight...do you flavor with sprinkle cheese or anything after the oven??
My son will not eat any meat..so vanilla yogurt and egg sandwiches are beginning to bore him..this may save me!!
